Low-Fat Recipes from Chris Aceto & Laura Creavalle

These recipes were created by two very dear friends of mine - Chris Aceto and Laura Creavalle.  Enjoy!

Spicy Chicken Fingers

1 pound chicken, cut into small pieces
1/2 cup flour
1 tablespoon Accent or Mrs. Dash
1 teaspoon cajun spice
1 teaspoon paprika
2 egg whites
Calories: 177
Carbohydrates: 13
Protein: 20
Fat: 5
Combine spices and flour in a small bowl.
Beat egg whites with a fork.
Thoroughly spray a non-stick pan with Pam.
Dip chicken pieces in egg whites then powder in flour mixture.
Grill.

Serves 4.

Tuna Burgers

1 can white water packed tuna
1 jumbo egg white
1 teaspoon curry powder or
    your favorite spice

1/2 ounce Aunt Jemima Buckwheat
    pancake mix

1 tablespoon chopped onions
Calories: 120
Carbohydrates: 12
Protein: 20
Fat: 2
Drain tuna so little moisture exists.
Place in a bowl.
Add egg white, pancake mix, spice, and onion.
Mix together with a fork.
Form into 3 inch diameter patties.
Grill both sides in a non-stick Pam sprayed skillet over medium heat.
Serve on a bun, with cheese and condiments.

Serves 2.

Oatmeal Banana Cookies

3/4 cup quick oats
1/2 cup fresh blueberries
1 very ripe banana, mashed
6 packets Sweet 'N Low
1 tablespoon honey
1 egg white
1 teaspoon cinnamon
Calories: 89
Carbohydrates: 17
Protein: 3
Fat: 1
Mix all the ingredients together in a large bowl.
Form into small silver dollar sized cookies.
Cook at 350 for 12 minutes on a Pam sprayed non-stick cookie sheet.

Serves 6.
